Observed shredded white cheese, Pico, cooked wings, and cooked onions cold holding in reach in unit on the preparation line at internal temperature of 46-48 deg F. Kitchen Manager informed the cooked onions had been cold holding from walk in unit and brought on preparation unit cold line a short time prior and discarded and placed the other food items in walk in for rapid cooling. Observed cooked chicken tinga with a preparation date of 11/10 stored in the reach in cooler across from the flat top. Per cook, the chicken was stored in the freezer but was unsure when it was pulled and thawed from the freezer. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Discussed with PIC and cook, when pulling cooked food items from the freezer that the establishment needs to put a new date mark of when the item was pulled. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
