Observed colored liquids in squeeze bottles and a spray bottle with no labels by the hand wash sink at the bar. The person in charge stated the bottles contained cleaning chemicals and labeled the bottles accordingly. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Inspector's notes

Observed raw shelled eggs and raw pork longaniza with internal temperatures of 46-48*F via probe thermometer in a reach in at time of inspection. Person in charge (PIC) states the items had been in the unit overnight and were not removed from the unit. PIC states the unit is scheduled for service due to recent temperature issues. Ambient temperature of unit was 40*F at time of inspection. All other TCS foods were cold holding at 41*F and below with ice in the unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Explained to PIC that molluscan shellfish may not be removed from the container in which they are received other than immediately before sale or preparation for service. Please refrain from tossing box that oysters come in until the last oyster is sold, tag is dated and held. Continue new routine with new box of oysters. Corrective Action: Correct prior to next routine inspection.

Explained to PIC that all kitchen prep and storage area should have sufficient lighting to perform daily tasks safely. Corrective Action: Correct prior to next routine inspection.
