Observed raw chicken stored directly on the lid of container of cooked noodle in the walk-in refrigerator, also observed unwashed vegetables stored above fried eggrolls in the walk-in refrigerator. Reviewed the food storage chart with manager. Manager relocated the raw chicken and fried eggroll to proper shelves at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked noodle stored at food prep area with internal temperature of 91*F, also observed cooked beef soup stored at wok station with internal temperature of 115*F at time of inspection. Manager stated the above food items were put out less than 30 min prior to inspection. All TCS food must be hot holding at 135*F or above. Manager moved the cooked noodle and cooked beef soup to walk-in refrigerator for fast cooling at time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw bean sprout and cut cabbage stored outside of prep cooler with internal temperature of 65*F and 71*F at time of inspection. Manager stated the bean sprout and cut cabbage were taken out from walk-in refrigerator less than one hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Manager moved the bean sprout and cut cabbage back to walk-in refrigerator for fast cooling at time of inspection. Corrective Action: Corrected at time of inspection.
