Observed cooked rice, cooked pork, and imitation crab meat at 45 - 47 Deg. F. in the walk-in. The unit was holding at 52 Deg. F at the start of the inspection, however the operator was able to turn it down to hold at 41 Deg. at the time of inspection. The operator also made a service call for the unit. Inspector's notes

Observed roasted mushrooms and cooked pork belly sitting at room temperature with sheet pans covering the pork belly. Mushrooms and pork had internal temperatures ranging from 90-100*F. According to chef, items usually sit out for 1-2 hours before being placed in walk-in. Discussed placing cooling foods in the walk-in as soon as temperature reaches 135*F to avoid food sitting in the danger zone (135*F-41*F) and to prevent pathogen growth. Discussed leaving foods uncovered to provide air flow during the cooling process. Mushrooms and pork belly were moved to walk-in at time of inspection. Corrective Action: Corrected at time of inspection.
