Inspector's notes

Observed cooked corn, cooked quinoa, and cut tomatoes on the top of the reach-in with internal temperatures ranging from 55-60*F when measured with a probe thermometer. According to chef, items had just been restocked form the walk-in less than an hour ago. All TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 41*F and below. Items were moved to walk-in at time of inspection. Discussed rearranging food on the line because of proximity to heat lamp, and replacing TCS foods with non TCS foods for better temperature control. Corrective Action: Corrected at time of inspection.

Observed prepped spinach dips in the reach-in next to the milkshake machine with internal temperatures of 50-55*F when measured with a probe thermometer. According to chef, spinach dips had just been prepped and placed in the reach-in. All prepped TCS foods must be cooled in the walk-in until internal temp is 41*F or below before being placed in cold holding units. Discussed keeping food below cooling threshold of equipment. Spinach dps were moved to walk-in at time of inspection. Corrective Action: Corrected at time of inspection.

This Advisory Visit was conducted per request of the operator to seek approval of a Dog Friendly Patio permit. At this time, the patio area cannot be approved.Signage and waste receptacle for dog waste deemed acceptable. Items still required for approval:1) Move patio tables/seating to be at least 7ft away from nearest entrance. Please display "No dogs allowed ..." signage at outside bar seating that is not 7ft from nearest entrance.2) Fill in cracks between patio tiles. 3) Obtain a "pet friendly/safe" cleaner to clean possible urine/fecal/vomit accidents. Please contact inspector when required items are obtained to schedule a follow up visit. No County legal action will result from this inspection.
