All food items observed to be kept within proper date range. TCS food should be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. Discussed with PIC adjusting print system to remove additional day. Discussed cleaning frequency with PIC in areas with improperly sloped floors.

Observed front line lettuce cooler closest to register with an ambient air temperature of 42.8*F. Unit was cold holding cut lettuce at 43*F-54*F. PIC stated lettuce is brought from walk-in and placed in unit at opening, 1 hour prior. PIC moved lettuce back to walk-in to rapidly cool to 41*F at time of inspection. Observed bottom drawer of unit does not smoothly close, and has to be forced shut. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC stated unit will not be used to hold TCS foods until repairs can be made. Establishment observed to have adequate cold holding equipment. Corrective Action: Corrected at time of inspection.
