Gallon sized ziplock bags sealed, full, and stacked upright of shredded cheese, deli turkey, and cut ham in cold holding unit with an internal temperature of 47*F. Person in charge stated foods were prepped within 20 minutes of inspection. All foods should be loosely covered and cooled in refrigeration with the proper capacities. Person in charge had employee place food in walk-in refrigerator and laid on its side for quick cooling to 41*F within 30 minutes. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. The person in charge was notified of the issue and instructed the employee wash hands . The dishes touched by the employee were ran through the dishwasher again. Per FDA Food Code, food employees must wash their hands after any activity which may result in contamination of the hands this includes handling raw meats, touching bare human body parts (except arms), coughing or sneezing, using the toilet, and handling dirty equipment or utensils.
