in the cookline rill food cooler, a bucket filled with on site prepared grilled chicken at 51 -54 deg f . asked manager regarding the preparation and cooling strategies. per manager prepared in the morning. MCESD food proepr holding temperature guidelines reviewed. manager removed grill chicken. suggested to place tcs food in a smaller metal pan. also pans of diced cooked chicken at 46-51 deg f . pan of portioned deli meats, ham, and turkey at 51 deg f . manager discarded excess food. please ensure rte/tcs food is kept at 41 deg f .
