Observed cooked salmon, steak and tilapia in metal contains stored in oven to keep warm, with an internal temperature of 110*F. According to PIC items had been moved to oven 30 minutes prior to inspection. Oven was not turned on at time of inspection causing temperature to drop below 135*f. PIC reheated proteins at time of inspection.

Also observed shredded lettuce enclosed in plastic container cooling in reach-in cooler with an internal temperature of 53*F. Observed mild, sweet, and spicy salsa at the self-serve salsa bar area all holding 46F. There was ice in the well, but the ice was not touching the containers. PIC said they were placed in the well since 10am. The salsa was discarded. Discussing ice levels with the PIC and monitoring TCS food items when using an ice bath. TCS food products must not exceed 41F when cold holding. Corrective Action: Corrected at time of inspection.

Manager removed the medicine. Ensure that medicines are kept away from food areas. Corrective Action: Corrected at time of inspection.
