Inspector's notes

Observed cooked green beans,carrots, mashed potatoes, diced sweet poatatoes, enclosed in rolling rack with an internal temperature of 47-50*F. According to PIC, items had been previously used by employee to make meals and was left out for a prolonged period of time before moving back to walk-in cooler. Suggested only pulling items that are needed to prepare meals instead of the entire rolling rack that would cause an increase in temperature on all foods inside. Rolling door cart was left opened and moved in front of walk-in cooler fan to allow for rapid cooling. Pre-defined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection.

Observed employee rinse hands in three compartment sink using spray hose after handling raw chicken and proceeding to handle deli meats for customer. PIC was instructed to wash hands at designated handwashing sink for 20 seconds with soap and hot water. PRIORITY VIOLATION-2-301.12 - Priority: Cleaning Procedure. Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Observed chicken salad, tuna salad, Mafalda, shredded chicken, smoked mozzarella pasta, buffalo chicken on rolling rack stored at room temperature with an internal temperature of 49-62*F. According to PIC, items had been taken out of walk-in cooler for prep but were not able to get start prep for 1 hour. Discussed importance of removing TCS foods from temperature controlled environment for what is actively being worked on to prevent increase in temperatures. All items were moved to walk-in cooler to rapidly chill.
