Observed several knives being stored in between the wall and the main prep table across from the cooking range. Discussed proper utensil storage with PIC. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Core-3-501.13, C: Thawing Observed frozen fully sealed fish filets in reduced oxygen packaging (ROP) that were thawing in the walk in. Discussed with PIC the need to introduce oxygen into the ROP to prevent the formation of toxins from Botulinum Toxin. PIC breached the ROP to introduce oxygen to the fish during the thawing process.
