After discussion with the person in charge it was determined the raw beef filets/48°F we placed in the beverage walk in refrigerator between 8-10AM. After discussion with the person in charge it was determined all other TCS foods had been in the beverage refrigerator since yesterday. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. PIC made service call for beverage walk in refrigerator. Main walk in refrigerator and other refrigerators in the establishment observed holding TCS foods at or below 41°F. PIC agreed to discontinue storage of TCS foods in the beverage walk in refrigerator until it maintains 41°F or below. Service tech observed onsite at the end of the inspection. Corrective Action: Corrected at time of inspection.

After discussion with the PIC it was determined the sushi rice was prepared at 11AM.
