Inspector's notes

Observed spray nozzle connected downstream of the AVB in the mop sink area. Informed PIC that this type of setup is not permitted. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers, which are designed for non-continuous pressure. If the sprayer has a trigger/shutoff valve, you generally need a backflow device capable of handling continuous pressure. The plumbing system should be designed and used according to applicable laws. PIC stated understanding. PIC disconnected the spray nozzle from the faucet at time of inspection. Corrective Action: Corrected at time of inspection.

PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
