Observed crab sticks on prep counter in ice bath at temperatures between 45-48*F Cold hold to be 41*F or lower. Operator explained that items were out for less than 1.5 hrs and should have added more ice to the ice bath. Crab was placed in cooler to rapidly cool back to 41*F. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed raw tuna in small two door reach in refrigerator at 46*F. As per employees, staff had been preparing sushi rolls and had product out for approximately 1 hour before returning to cooler. Cold hold of food is to be 41*F or lower. Advised employees to take our smaller portions when preparing food for retail sales. Tuna was placed in walk in freezer on site to cool rapidly. Corrective Action: Corrected at time of inspection.
