Observed marinara (113-120°F) and marinara with meat balls 117-126°F) hot holding below 135°F in the hot well. Alerted manager who stated the sauces were heated and dropped in the hot holder this morning at open (see embargo) and the hot well was adjusted to a hotter setting. Discussed the importance of keeping hot holding foods above 135°F. Corrective Action: Corrected at time of inspection.
