Observed several small reach in cold holding units with an ambient temperature ranging 36-49*F. Person in charge stated unit temperatures fluctuate upon opening during rush service. All refrigeration units holding TCS foods, must be able to hold an ambient temperature of 41*F or below. Person in charge to place maintenance requests and continue to monitor temperatures. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.
