Inspector's notes

Observed the following food items cold holding at internal temperature of 45-51 deg F in a reach in unit in the food service front area that was holding >41 deg F cut leaf lettuce, diced buffalo chicken, mozzarella cheese sticks, ham and cheese peperoni wraps, and yogurt. PIC discarded food items during inspection. Observed a container holding chocolate and white milk cold holding at internal temperature of 45-51 deg F over a small amount of ice in the food serving area. PIC informed the milk had been in this container <2 hours and placed milk in walk in unit for rapid cooling. Corrective Action: Corrected at time of inspection.

The sanitizer bucket for the 3 compartment sink was empty, and PIC changed out the bucket. After priming, with the new bucket attached, the 3 compartment sink had a proper concentration range for quat ammonia. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. A chemical sanitizer like quat ammonia, must have a concentration between 150-200ppm for sanitizing food contact surfaces. Correct By: Corrected At Time Of Inspection
