-- Observed employee spray off dirty dishes with gloved hands, then start to put away clean dishes without washing hands and changing their gloves between tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Requested that the clean dishes that came in contact with dirty hands be relocated back to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

The ambient temperature of the cooler was found to be 53*F. The cooler was not checked earlier today to verify the temperature. PIC discarded the cheese cakes and whipped cream in the cooler. The cooler will not be used for storing TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below.
