observed at the cookline/grill area coolers, bags of sauteed steak and veggies overfilled. temperatures indicating 61-64 deg f . also cut lettuce at 54 deg f . some portioned control deli meats, beef and turkey at 46-51 deg f in the reach-in cooler across from the frying station. showed facility manager on duty. all removed. also a large bag of leafy green , placed atop the cookline cooler top panels. temperatures indicating 49-56 deg f . discussed with facility manager. suggested utilizing smaller portions and not overfilling the food pans. use of metal pans reviewed as well. Observed raw pooled eggs and parmesan cheese in the pancake cooler with internal temperatures of 51-53*F when measured with a probe thermometer. According to manager, these items had been restocked 2 hours prior. Unit was not functioning properly which caused food to be out of temperature. All TCS (time and temperature controlled for safety) food must maintain internal temperatures of 41*F and below. Eggs and parmesan were placed in the walk-in to cool at time of inspection. Observed sausage links in a hot holding unit in the back of the kitchen with an internal temperature of 127-132*F when measured with a probe thermometer. According to manager, sausage links were just cooked and placed in the unit 30 minutes prior. All hot held TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 135*F and above. Sausages were reheated to 165*F at time of inspection and hot holding unit was turned up. Corrective Action: Corrected at time of inspection.
