For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.>>>Observed the following time/temperature controlled for safety (TCS) foods with internal temperatures between 45*F - 52*F in the top loading refrigerated grab and go case near the deli island: Cooked Turkey/Sweet Potato/Green Bean Meal, Cooked Turkey Meatloaf/Cauliflower Meal, Cooked Pesto Chicken/Potato Meal, and Cooked Atlantic Salmon Meal; per the person in charge all of these foods had been prepped at least 1 day before and had been in the case for more than 4 hours. The foods above with temperatures at or above 45*F were limited to the top layer of prepared grab and go containers. It was determined that the establishment can only stack the containers 3 containers high if they want to maintain internal temperatures for these prepared grab and go meals at 41*F and below. Person in charge willingly discarded of all of the grab and go containers that were above the 3rd stack. Also observed the following TCS foods with internal temperature's between 48*F - 58*F in the reach in refrigerator on the south east side of the deli island: ready to eat buffalo chicken mix, cream cheese, and butter; person in charge indicated that these foods were prepared (from cold ingredients) or opened more than 4 hours before inspection and had been stored in the unit the whole time as well. The measured ambient temperature of the unit using a min/max thermometer was 49.8*F. Person in charge willingly discarded of all of the foods above. Except during preparation, cooking, cooling, or when time is used as a control all Time/Temperature Controlled for Safety foods MUST be maintained at 41°F or less OR 135*F or more.
