Observed 2% milk and whole milk measuring at 52-53F in cooler beneath espresso machine. Ambient temperature of cooler measured 52.8F. PIC reports milk was kept in cooler overnight. All milk improperly cold held were discarded by PIC at time of inspection. PIC will discontinue use of cooler for TCS foods until it can maintain 41F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Any substance(s) added to food must be GRAS (Generally Recognized as Safe) and/or used consistent with all legal requirements. It is the responsibility of the permit holder to ensure that their menu items comply. This establishment was found to be using Kava, Kratom, or CBD as a food ingredient. The Arizona Department of Health Services (ADHS) is the agency responsible for regulating the use of Kava, Kratom, or CBD in food. You must contact ADHS to obtain information on requirements related to these products.

Observed dairy milk items (whole milk, heavy cream, non-fat milk, half&half milk) measured 50-52'F in reach-in unit located below coffee machine. Ambient temperature of unit observed at 50.0'F. PIC stated whole milk items were brought out less than 4 hours ago and the rest have been stored in the unit since the night prior. All whole milk items improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. All TCS foods improperly cold held (half&half milk, heavy cream, non-fat milk) were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed ambient temperature of reach-in unit located under coffee machine at 50.0'F. Unit was emptied of TCS food items at time of inspection. PIC agreed to not use unit in question until it has been fixed. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC put a work order in at time of inspection. Repair prior to re-inspection on 10/02/24. Corrective Action: Correct prior to re-inspection.

PIC stated the dog in question is a service animal but the cat is not. PIC stated the cat in question is an outdoor cat and is known to sneak in through opened door while the restaurant is busy. Door leading to parking structure observed opened at time of inspection. PIC removed cat off premises at time of inspection. Live animals prohibited on premises of food establishment, with the exception of fish in aquariums, shellfish, patrol dogs (in certain areas), service animals, pets in dining areas of institutional care facilities (when conditions in Code are met), confined animals in nonfood area of variety store or tourist park.
