Inspector's notes

In reach-in cooler/61F in service area, observed turkey and apple with cheese sandwiches/ 64F which were prepared a day in advance. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The PIC voluntarily discarded the sandwiches and immediately scheduled repair service. A technician arrived before the completion of the inspection. Staff will not refill the unit until it is cold and can maintain temperatures at or below 41F. Corrective Action: Corrected at time of inspection.
