Inspector's notes

Observed American cheese cold holding at internal temperature of 50 deg F in a reach in unit that was holding >41 deg F. PIC informed the cheese had been in unit since earlier in day and placed in walk in. Observed the following food items cold holding at internal temperature of 47-53 Deg F over stacked in reach in unit that was holding >41 deg F, Cut leaf lettuce, Tuna Salad, Boiled Ham, Provolone, Salami, Peppered ham, Deli Turkey and Swiss. PIC informed this food items had been in unit several days prior and discarded. Cut leaf lettuce and chicken salad were also holding in this unit and PIC informed this food items had been placed in unit a short time prior and placed back in walk in unit.

Observed cut leaf lettuce cold holding at internal temperature of 53 deg F on the preparation line. The establishment uses time as a public health control for the lettuce and the PIC was able to recall the time the lettuce was placed out of temperature control and placed time on lettuce as per their procedure. Corrective Action: Corrected at time of inspection.

Observed the front large meat case cold holding at internal temperature of 52.5 deg F (according to the min/max thermometer). TCS food items were discarded or redirected to alternate unit. Currently there is no TCS food items in either case. Technician is currently at establishment to repair units. Corrective Action: Corrected at time of inspection.
