Observed marinara, cooked onions, and cooked shredded chicken with an internal range of 115F-130F located in the steam table. Per PIC, the food items have been in the steam table for less than 2 hours. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed steam table water with a maximum temperature of 133F, maintaining TCS foods below 135F at time of inspection. PIC increase the temperature on the steam table, but after several minute the temperature of the water did not get to proper hot holding temperature. Hot holding equipment must have the capacity to maintain TCS foods at 135°F or above. Must repair hot holding equipment such that it maintains TCS foods at 135°F or above. Corrective Action: Corrected at time of inspection.
