Observed accumulation of grease, soil and other food debris under the stoves and fryers in the main cooking area as well as on some of the adjacent walls near the space. Discussed with person in charge to clean these areas on a more regular basis. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
