Inspector's notes

Observed several dishes on the clean dishes rack that were stored as clean according to the person in charge. Upon separation and closer observation of some of the dishes, some of the dishes were observed to still have food residues stuck on the inside of them. Other dishes were observed to be visually clean but still had water trapped between the nested pans. The dirty pans were returned to the dish area to be washed, rinsed and sanitized. The wet stacked dishes were separated and allowed to finish air-drying. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.
