Observed an employee handle an ice cream cone with bare hands. Discussed with person in charge that ready-to-eat foods such as an ice cream cone must be handled with a utensil, such as clean gloves. The ice cream cone was thrown away at time of inspection (see embargo form). Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Corrective Action: Corrected at time of inspection.

Discussed with PIC that the Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Observed broken floor tile near the back of dry storage room. Discussed with PIC that All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Person in charge (PIC) had already placed a work order for the sink. An alternative handwashing sink is available in the main kitchen. Re-inspection will be conducted within 10 days. Core-4-201.11, C: Equipment and Utensils-Durability and Strength --Observed a non-commercial grade fryer being used to fry onion rings and french fries. Per PIC, their commercial fryer had broke last week and a new one was scheduled to be delivered today or tomorrow. Chicken tenders and cheese curds were not being cooked in the non-commercial grade fryer.
