Repeat Violation PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed that the dishwasher tested at 0ppm for chlorine sanitizer. Mechanical and manual dishwashing must test between 50ppm and 100ppm for chlorine sanitizer, Ensure before use that the correct concentration of sanitizer is present by using the test strips. The PIC called for service at the time of this inspection and staff will use 3 comp sink to wash rinse and sanitize wares until the dishwasher is dispensing sanitizer correctly. Please be aware that this is a 2nd consecutive violation. If a 3rd consecutive violation occurs the County may take action on your permit.
