Inspector's notes

Observed handwashing sink in the main food prep area that was blocked by a large stand mixer. The sink did have soap and paper towels however it was blocked by the mixer. Discussed with person in charge to maintain the handwashing sink free and clear of obstructions. The person in charge moved the stand mixer over to the side to clear the handwashing sink. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a large number (9 in total) of 4.5 gallon containers of ice cream in two different ice cream cases with deceased fruit flies in the ice cream. The containers of ice cream with the deceased fruit flies in them were discarded at time of inspection (see embargo form). Discussed with person in charge to put lids on the containers of ice cream and to clean the ice cream cases out on a more regular basis. All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Observed an open package of raw chorizo sausage stored above ready-to-eat (RTE) foods such as tomatoes, lettuce, kiwis and salsa in the reach-in refrigerator. Person in charge relocated the raw chorizo sausage below the RTE foods. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed a large accumulation of fruit flies throughout the kitchen area. Some of the fruit flies were observed in the ice cream as well. Discussed with person in charge to seek licensed pest control services for the establishment. Person in charge will seek out licensed pest control services. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist. Corrective Action: Correct prior to next routine inspection.

Discussed with person in charge to acquire a backflow preventer. Instructed person in charge to disconnect the hose fitting in the meantime until that vacuum breaker attachment can be acquired. All plumbing must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cream base for ice cream, cut melons, sliced deli ham and cooked pinto beans with internal temperatures as measured using a probe thermometer of 55°-60° F inside of a reach-in unit. A min-max thermometer was placed in the unit for 5 minutes and the ambient air temperature on the min-max thermometer was at 63° F. Per the person in charge, the TCS foods had been in the unit from the night before. TCS foods inside of the unit were embargoed at time of the inspection (see Embargo). Person in charge reached out to a service technician to come work on the unit. Person in charge agreed not to put any TCS foods into the unit until the unit is repaired. The establishment has sufficient capacity to maintain normal operations. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
