Inspector's notes

Observed various temperature control for safety items such as meat sandwiches, smoothies, and dairy products in the cooler. PIC stated these items had been inside the cooler since the day before. Ambient temperature of unit measured 49*F at time of inspection. Internal temps ranged from 46-53*F at time of inspection. These items were voluntarily discarded - see embargo list for details. Discussed cold holding requirements, instructed PIC to discontinue use of unit for TCS foods until in good repair. Alternative refrigeration is available to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed handwashing sink next to three comp sink detaching from wall with gap. Handwashing sinks must be flush against the wall and sealed. Equipment that is stationary (not easily moved) and subject to moisture must be sealed and maintained to prevent the harborage of insects and rodents. Also observed the three compartment sink to have a rusty and white build up in the sink basins and drain board. Discussed with Person in Charge (PIC) all fixed equipment when not easily movable to properly clean shall be sealed with caulking to create a smooth and cleanable surface. Also discussed with PIC to fix/ replace / clean the three compart sink and drainboards and all equipment shall be cleaned and in good repair. Corrective Action: Correct prior to next routine inspection.
