Internal temperature of 52degrees F for sliced tomatoes, 51degrees F for pico de gallo, 45degrees F for various green and red salsas. All other items stored in unit are non-TCS. Discussed with operator Time/temperature control for safety foods shall be cold held at 41degrees F or below. Per operator all TCS foods had been filled at opening of day less than 4hours prior. Operator proceeded to add ice underneath containers at time of inspection. Discussed with operator to ensure any remaining TCS is discarded past the 4hours. There is an additional 3-door prep refrigeration unit in front service area with adequate cold holding temperature of 41*F or below and additional tall-door refrigeration unit a back of house at 41*F or below. Operator stated food items were placed in unit less than 4hours prior. Discussed with operator to ensure adequate cold holding for Time/temperature control for safety (TCS) foods at 41*F or below. Observed sliced and shredded lettuce with an internal temperature of 47F. Person in charge states they were cut and shredded at room temperature and put in reach in fridge unit four hours prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
