Observed employee using circular wooden, unsealed cutting board to cut ready to eat meats for sale. Person in charge (PIC) says they had recently switched to using the cutting board. Explained to PIC that all food-contact surfaces must be smooth, non-absorbent, and easily cleanable. The wood cutting board had visible deep cuts and was not sealed properly. Food debris was collecting into the uneven grooves. PIC replaced wood cutting board with food safe plastic cutting boards at time of inspection. Corrective Action: Corrected at time of inspection.
