Observed reach-in self service refrigerator by the register measuring with an ambient temperature of 47 degrees. TCS desserts such as Flan measured with internal temperature of 46 degrees F. The desserts were stocked approximately 3 hours prior to inspection. The desserts were moved back to the walk-in refrigerator for rapid cooling. Discussed cold holding and conducting routine temperature checks. Refrigerator will not be used to store any TCS food items. Refrigerator not necessary for flow of business. :
