Inspector's notes

Observed sliced cheese, tomatoes, cooked sausage, and cooked egg in the sandwich prep table with temperatures between 51 and 54 degrees Fahrenheit at the time of inspection. Per PIC, items had been there less than 2 hours prior to inspection and were moved to a different reach in to cool. Discussed having unit checked to ensure food will be at 41 degrees Fahrenheit or below. Also discussed keeping a little space between the unit and the wall to allow for airflow. Corrective Action: Corrected at time of inspection.
