Inspector's notes

Observed cubed cheese, marinated raw fish, and raw bacon slices at 45°F, 48°F, and 50°F respectively in the prep table and reach-in fridges at the cookline. Per PIC, bacon and cheese had been placed in the prep table and reach-in during the late morning. Per employee, marinated fish was seen to be around 48°F that morning and was transferred to other reach-in at that time. Date mark on marinated fish showed 5/17. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC placed bacon and cheese in walk in to rapidly cool, disposed of marinated fish. Corrective Action: Corrected at time of inspection.
