Observed various flavors of frozen ice cream in clear containers in a reach in freezer at the time of inspection. Ice cream was frozen and hard to the touch at the time of inspection however the ice cream had visibly went through a period of thawing and was not maintained as frozen as the ice cream had separated and there was a darker, icy layer on the bottom and a lighter, cream layer at the top. Stored frozen foods shall be maintained frozen unless in the process of slacking or thawing. Discussed with PIC and employee that frozen foods must be maintained as frozen. Corrective Action: Corrected at time of inspection.

Observed after mop sink water was turned on, water was not draining down the mop sink drain at the time of inspection, and accumulating in the sink. Improper repair or maintenance of any portion of the plumbing system may result in potential health hazards such as cross connections, backflow, or leakage. These conditions may result in the contamination of food, equipment, utensils, linens, or single-service or single-use articles. Improper repair or maintenance may result in the creation of obnoxious odors or nuisances, and may also adversely affect the operation of warewashing equipment or other equipment which depends on sufficient volume and pressure to perform its intended functions. All plumbing must be maintained in good repair at all times. Per PIC, they were unaware the mop sink was not able to properly drain prior to the time of inspection and after taking corrective action by snaking the drain, the water properly drained at the time of inspection. Observed cut bok choy at 47°F, cooked noodles at 52°F, dumplings at 47°F and 45°F at the buffet line. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, foods had not been out on the line for longer than a couple hours. All TCS foods improperly cold held were covered, temperature lowered, and tested to be 41°F later in the inspection.
