Temperatures taken with probe thermometer read between 45*F-50*F for all items listed. PIC stated that they had performed a temperature check at 11am for some items and all tested below 41*F. An ambient temperature of the unit was taken using min/max thermometer and registered at 42.2*F. Food was out of temperature for under 4hrs and was removed from the unit at time of inspection. Food was placed in walk-in unit for rapid cooling. Educated PIC on taking temperatures of all TCS food items when performing temperature logging. Correct By: Corrected At Time Of Inspection
