At the time of inspection, the sanitizer dispenser at the 3-compartment sink was dispensing quaternary ammonia based sanitizer at greater than 400ppm. No dishes were being actively sanitized at the time of observation. Instructed the manager to dilute the sanitizer at the 3-compartment sink and verify with the appropriate test strips until their chemical provider can make a visit to calibrate the dispenser.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding.---Observed to pans of cooked pinto beans in hot holding unit on main cook line to have an internal temperature of 111F-118F. Per time stamp sticker and PIC, beans were cooked 30 minutes prior and then placed for hot holding. All TCS food items must be hot held at 135F or higher.
