Spoke with PIC and items were cooked yesterday morning and placed into the reach-in units to cool. Temperatures were not verified to reach 70 degrees F after 2 hours or 41 degrees F after 6 hours. Items were discarded. Discussed cooling methods with PIC. TCS foods must be cooled from 135 degrees F to 70 degrees F within 2 hours and then from 70 degrees F to 41 degrees F in four hours. Ambient temperature of cooler measured 53.7'F with min/max thermometer. Per employee temperature of cooler had been verified when they arrived on site for day, approximately 2 hours prior.
