Observed red onion jam on the line in a squeeze bottle from 5/27. Observed in the walk-in cooler pickled onions from 6/16, pickled shallots from 6/23, and red onion jam from 5/29. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection. 3rd Consecutive Repeat.

RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). The PIC indicated that datemark was incorrect, and had been prepared sooner. Maintain accurate datemarks. The tomato jam was discarded by PIC at the time of inspection.
