Observed a large cooking pot of menudo in the walk in cold holding unit with an internal temperature of 152F. The PIC stated it had been cooked 2 hours prior. TCS food prepared from ingredients at ambient temperature shall be cooled within 4 hours to 41°F or less. Within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. The PIC had the menudo reheated to 165F then poured into shallow pans to cool within the appropriate amount of time.
