Observed cooked potatoes being held in deep, covered containers in low reach in cooler in back area. Potatoes had been prepared around 5 hours prior and were uncovered at time. Please ensure food items are cooled in shallow, uncovered containers until they reach 41 degrees F. Corrective Action: Corrected at time of inspection. Second consecutive violation.

Observed cooked, diced potatoes at 80*F made 20 minutes prior, and cooked scrambled eggs of 53*F made an hour prior, in deep containers of more than 4 inches and covered with Suran wrap. TCS foods must be cooled in uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Discussed utilizing a probe thermometer. Corrective Action: Corrected at time of inspection.

Core-2-402.11 , C: Effectiveness-Hair Restraints Upon arrival into the establishment, observed 2 of 3 people with long hair without a hair restraint. Food employees shall wear hair restraints such as hats, hair coverings or nets, beard restraints, or other effective hair restraints and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food; clean equipment, utensils, and linens; and unwrapped single service and single-use articles. PIC stated it is a part of the establishment's policy to have their hair tied. PIC had the employees tie their hair back and will retrain staff on the policy.
