Observed in walk-in refrigerator several TCS items with internal temperatures of 47*F to 57*F measured with a probing thermometer. Per person in charge (PIC) the items were made on 9/9/25 and placed in the walk-in the previous day. The TCS items were in containers deeper than 4 inches: Pizza Sauce, marinara sauce, and cooked wings. Discussed with PIC cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were embargoed and discarded by PIC at time of inspection. Discussed with PIC to store the canned ingredients in the refrigerator prior to prep to assist with cooling parameters. Corrective Action: Corrected at time of inspection.

Advanced prepping and cooling require an E&D Class 4 permit. Establishment is operating as an E&D Class 4 permit; permit has been adjusted, and fee changes have been discussed with PIC.

Inspector's notes

Observed in the reach-in next to the stove to be at 57*F measured with a min/max thermometer and several TCS items were internally 54*F to 59*F. Per person in charge (PIC) the TCS items in the unit for more than 4 hours: cooked spaghetti, cooked bowtie, cooked fettucine, cooked angel hair, and cheesecake, cannoli cheese and limoncello mascarpone. Those items were embargoed and PIC discarded at time of inspection. Unopened boxes of cheesecake, cannoli cheese and limoncello mascarpone were opened and were observed to be at 41*F and were relocated to adequate refrigeration. Rigatoni had been cooked and placed in the unit 2 hours prior to inspection and was at an internal temperature of 80*F. Discussed with PIC to reheat the pasta to 165*F and follow approved cooling of 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
