At the walk in freezer that holds frozen foods, observed a frozen liquid of icicles from the fan unit and buildup of the frozen liquid on the entrance of the walk-in freezer door. Discussed with Person in Charge (PIC) to fix/replace the unit and remove the frozen liquid buildup. Also discussed to not store food under the buildup to prevent contamination. No contamination observed during inspection. Corrective Action: Correct prior to next routine inspection. 3RD REPEAT VIOLATION.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed walk-in unit at 48*F measured with a min/ max thermometer. Observed several TCS items with internal temperatures of 48* to 51*F measured with a probing thermometer. Per person in charge (PIC) the unit was previously fixed 2 days prior to inspection by a professional. PIC stated all TCS items were in the unit for less than 4 hours and were relocated to the beer walk-in cooler. Observed the beer walk-in cooler at a temperature of 51*F measured with a min/max thermometer and the TCS items had an internal temperature of 51*F to 58*F measured with a probing thermometer. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed with PIC to utilize other adequate refrigeration in the facility until both walk-ins are fixed and can maintain TCS at 41*F or less. Embargoed TCS items and PIC discarded at time of inspection. Discarded TCS items: Naked juice (green machine & strawberry banana), whole milk (12oz, half gallon), 2%milk (12oz, half gallon), chocolate milk (12oz, half gallon), Shamrock protein milk (chocolate, vanilla), prosciutto and cheese, butter, raw bacon, cut melon, Oh Snap! pickle bites, bean and cheese burrito, turkey breast wrap, Greek yogurt bars, chicken Caesar wrap, Philly cheesesteak, meat cheese party tray, Caesar salad, and cobb salad. Corrective Action: Corrected at time of inspection.
