Observed several flies in dining area. Doors to outdoors with gaps and opening at hinges and door sweep, exposing the outdoors to the dining area. Recommended having seals and gaps closed, as well as installing fly fan at entrance and exit doors. 6-202.15 - Core: Outer Openings, Protected Predefined Comment: Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Observed mechanical warewashing machine run several cycles with dirty dishes, and produce a chlorine strength of less than 50ppm. Unit should produce a strength of at 50-100ppm every time for proper sanitation. Person in charge stated a service request has been placed, removed dishes, placed in 3-compartment sink, and stated all dishes will be washed manually at 3 compartment sink until unit is able to produce a strength of 50-100ppm.
