Person in charge was unable to produce parasite destruction letter at time of inspection. Parasite destruction records or letter from supplier are required for all non-exempt fish served raw or undercooked at establishment. Must provide parasite destruction letter from supplier prior to re-inspection. Corrective Action: Correct prior to re-inspection on Friday, 3/16/2026.

Observed refried beans in walk-in cooler marked with a date of preparation of 2/20/2026. Ready-to-eat, time/temperature control for safety (RTE/TCS) foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by person in charge at the time of inspection. Corrective Action: Corrected at time of inspection.

All medicines were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection. 7-209.11 - Core: Storage-Other Personal Care Items Addl Notes: Observed personal employee open drink bottles, keys, cell phone and other personal items stored on food equipment by the deli counter. Discussed designated seperate storage of employee personal items to protect food and food equipment from contamination. The person incharge removed and properly stored employee personal items. Corrective Action: Corrected at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Observed can of Raid pesticide stored in the back recieving area next to the walk-in cooler. Predefined Comment: All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked chicken wings with internal temperature between 100F - 110F in the hot holding deli case. Thee person in charge stated the food items had been cooked and placed into the deli case for hot holding at 8am, now more than 2 hours ago. Observed cooked potatoes with vegetables and cooked chicharron in salsa verde sauce with internal temperature between 115F - 120F at the buffet line. The person in charge stated the food items had been cooked and placed for hot holding at 8am, now more than 2 hours ago. The chicken wings, potatoes with vegetables, and salsa verde chicharron were embargoed at the time of inspection. Observed cooked beef ribs and meat tamales with internal temperature between 120F - 130F in the hot holding deli case. The person in charge stated the food items had been cooked and placed in the deli case for hot holding 1 hour ago. The person in charge removed the beef ribs and meat tamales and reheated both to 165F before returning them to the deli case for hot holding. Correct By: Corrected At Time Of Inspection
