Inspector's notes

Slices of cheese stored on top of containers of cold holding table, on edge of table (to the side of the containers, not in cold holding area), and in a container but positioned so that it was extending up, out, and above the container of the cold holding table. Internal temperature of the cheeses are 47-55*F, with the warmest being the one on the side of the unit. Temperatures were verified with inspector's calibrated thermometer. PIC stated the cheeses had been placed in those areas from cold holding above 30 minutes ago and placed them properly into cold holding. Cold holding table was holding below 38*F. Please ensure cold held TCS food items are maintained at 41*F or below. ***2nd consecutive violation*** Corrective Action: Corrected at time of inspection.

-- In milk/cream dispenser, observed cream with an internal temperature of 65°F using probing thermometer. The person in charge was unsure how long the cream had been in the dispenser. At the time of inspection, the cream was voluntarily discarded. An employee discovered the temperature setting on dispenser was too high and turned it down to maintain the temperatures at 41°F or below. Verified ambient temperature in unit decreasing towards the end of the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

-- In reach-in refrigerator drawer, observed individually wrapped stuffed ham and cheese croissants with a thawed date of 8/29/25. The person in charge believed the croissants were just pulled within the past few days, but was unsure exactly when they were thawed. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Discussed with the PIC ensuring employees are updating date mark labels when placing new product in containers. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
