Observed several packages of raw pork thawing in a prep sink. The clear plastic container was too small to contain the number of packages of raw pork they were attempting to thaw under running cold water. One of the packages of raw pork was sitting on top of the flood rim of the clear plastic out of the direct flow of water, effectively thawing at room temperature. Discussed thawing practices with staff. Corrective Action: Corrected at time of inspection.

Surfaces of UTENSILS and EQUIPMENT contacting FOOD that is not TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be cleaned: (4) In EQUIPMENT such as ice bins and BEVERAGE dispensing nozzles and enclosed components of EQUIPMENT such as ice makers, cooking oil storage tanks and distribution lines, BEVERAGE and syrup dispensing lines or tubes, coffee bean grinders, and water vending EQUIPMENT: (a) At a frequency specified by the manufacturer, or (b) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Corrective Action: Correct prior to next routine inspection. There was organic matter adhering to the deflector plates on both ice machines in the kitchen. Clean and sanitize. Corrective Action: Corrected at time of inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils.
