Inspector's notes

Observed dishes stored as clean at the clean dishes rack. Upon separating some of the dishes, one dish was observed with dried cheese stuck on the inside and several other pans had food smears and other bits of residue stuck to the pans. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. *2ND CONSECUTIVE PRIORITY FOUNDATION VIOLATION.* Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed some dishes at the clean dishes rack that were stored as clean according to the person in charge. Upon separating some of the dishes, one was observed to have greasy smears/residue on the inside while another was observed to still have some spots of tomato sauce on the inside of the nested pans. The dirty dishes in question were taken to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. Discussed with person in charge that all food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Cheese pizza, various dairy/egg based sauces, and dairy based frosting on the cinnamon rolls measured internal temperatures between 50°F-53°F in the reach-in refrigerator on the line. Thermometer was calibrated on site. Per person in charge (PIC), these items were stocked in the unit about 2 hours prior and were moved into the walk-in refrigerator to facilitate rapid cooling. Ambient air temperature of the unit measured 53°F per min/max thermometer. Establishment had adequate refrigeration to maintain operation. Reviewed cold holding requirements with the PIC.
