Inspector's notes
Observed various TCS food items on the service line measuring between 50-60 degrees F. Items such as condiments, salads, and sauces. All items had been stocked less than 2 hours prior to the inspection. All items were placed on time as control or ice baths were utilized. Refrigeration was functioning properly. The food was stored outside of refrigeration over improper ice baths OR in the top portion of a prep refrigerator with warm air blowing on it (Air conditioning issue). Discussed cold holding and alternative cold holding methods. Adequate refrigeration available throughout the facility.
